Since 1985, we've been crafting authentic, handcrafted bread using time-honored techniques passed down through our family.

It Started with a Dream

In 1985, master baker Giovanni Rossi opened a small bakery in Portland with a simple dream: to share authentic, handcrafted bread with his community.

Giovanni brought with him generations of baking knowledge from his family's bakery in Sicily. He created our signature sourdough starter, which we still use today - now 38 years old.

Today, his granddaughter Maria continues the tradition, using the same sourdough starter and time-honored techniques that made our bread famous throughout the Pacific Northwest.

We source organic flour from local farms, use only natural leavening, and never add preservatives. It's baking the way it was meant to be done.
