Our Process
From grain to glass, every step is a labor of love. Here's how we craft our award-winning beers.
Sourcing Ingredients
We source the finest malts from local Oregon farms, hops from the Willamette Valley, and the purest water from the Cascade Range. Quality starts with quality ingredients.
Mashing & Lautering
Our brewers carefully control temperature during mashing to extract sugars from the grain. The resulting sweet liquid, called wort, is then separated from the spent grain in our lauter tun.
Boiling & Hopping
The wort is boiled for 60-90 minutes while we add hops at precise intervals. Early additions add bitterness, late additions add aroma—it's where the magic happens.
Fermentation
Our house yeast strains transform sugars into alcohol over 1-3 weeks. Temperature-controlled fermenters ensure consistent, clean flavors every time.
Conditioning & Packaging
After fermentation, beers condition in cold tanks to develop their full flavor profile. Finally, they're kegged fresh for the taproom or canned for you to enjoy at home.
